Cocoa Almond Cookies

Ingredients

1½ cups oat flour

¼ cup unsweetened cocoa powder 

2 eggs

½ cup almond butter 

3–4 tbsp xylitol (adjust to taste) 

½ tsp baking powder

pinch of salt

Instructions

Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.

In a bowl, mix oat flour, cocoa, baking powder, salt, and xylitol.

Add eggs and almond butter, then mix until a thick dough forms.

Scoop

Scoop small portions onto the tray and flatten slightly with a fork.

Bake

Bake for 10–12 minutes until set but still soft in the center.

Let cool

Let cool on the tray for 5 minutes, then transfer to a rack to cool completely.
